Description
In food, glycerol (E422) is used to preserve water content, as a dissolver or as a sweetener.
As a substitute to sugar, it contains less calories than sugar, and parallel to this, its sweetness is only 60% that of sugar.
On the other hand, it doesn’t raise blood sugar and is not a feedstuff to bacteria causing dental caries.
It’s often used to substitute fatty acid as well.
Glycerol is permitted to be added to any food without any quantity limit.
