PME Glycerine – 35g (1oz)

PME food-grade glycerine helps keep bakes soft and icings workable. It mixes with sugar-based recipes and is useful for softening fondant, easing stiff royal icing, and improving moisture retention in cakes. Use it in buttercream for a smooth finish. Clear and neutral in taste. Also known as glycerin and listed as E422.

Hints and Tips

To revive dry fondant, work in a few drops and rest it for a short time before kneading again. For cookies that need a softer royal icing, add a very small amount to adjust the set without losing definition. A little glycerine in sugar syrup can help keep it clear and smooth. If buttercream crusts too quickly, a tiny addition may slow it down so edges smooth more easily. Add sparingly and give the mix time to settle before deciding if more is needed.

How to Use

Stir a small amount into your chosen recipe and mix thoroughly. Start light, then check consistency after resting, as the effect becomes clearer once the mixture settles. Increase in tiny increments until the texture feels right. Keep the bottle capped between uses.
